Thai chicken soup

Best thing i have cooked all winter!

2 chicken breasts
1 lemongrass stalk
2 kaffir lime leaves
1-2 chillies
2 garlic cloves
3 tsp chopped ginger
1 onion
115g rice noodles
400ml coconut cream
TBS thai fish sauce
Juice of 1 lime
Coriander leaves
Other veggies (celery, capsicum, tomatoes, brocillini, baby spinah, cabbage, carrot)
1.2 L chicken or vegetable stock

Soak noodles in water according to packet instructions.
Bring stock to the boil.
Add lemongrass, kaffir, chillies, ginger, garlic and onion all finely chopped.
Add finely chopped chicken.
After cooking for a few mins till brown, add other veggies all finely chopped.
Simmer for 20 minutes.
Stir through coconut cream, lime juice and fish sauce.
Seasan with salt. Add noodles. Garnish with fresh coriander leaves.

    I’ve never heard of carrot soup..I’ll have a look. Gotta love Thai dishes.
